Sunny Beet Carrot Burgers

This is a Sunny Beet Burger, a unique and delicious vegetarian specialty served warm on seeded whole wheat bread with lively Green Goddess dressing, avocado, salad greens and sliced tomato.

Ingredients

  • 2 cups golden or red grated beets (about 3/4 lb)

  • 2 cups grated carrots (about 1/2 lb)

  • 1 cup cooked brown rice

  • 1 cup grated cheddar cheese

  • 1 cup sunflower seeds, toasted

  • 1/2 cup sesame seeds, toasted

  • 2 large free-range eggs, beaten

  • 1/2 cup grated onion

  • 1/4 cup olive oil

  • 3 tsp all-purpose or gluten-free flour

  • 3 Tbsp chopped parsley

  • 3 or 4 cloves garlic, minced

  • 2 Tbsp tamari

Directions

  1. Preheat the oven to 350 ̊ and generously grease a rimmed baking sheet or use parchment paper.

  2. Mix all the ingredients in a large bowl, stirring to combine evenly.

  3. Form the mixture into patties using a packed 1/2 cup for each. Arrange them on the baking sheet.

  4. Bake the burgers for 25-30 minutes or until firm and the vegetables are cooked through.

    Makes 10 burgers.
