Sunny Beet Carrot Burgers
Ingredients
2 cups golden or red grated beets (about 3/4 lb)
2 cups grated carrots (about 1/2 lb)
1 cup cooked brown rice
1 cup grated cheddar cheese
1 cup sunflower seeds, toasted
1/2 cup sesame seeds, toasted
2 large free-range eggs, beaten
1/2 cup grated onion
1/4 cup olive oil
3 tsp all-purpose or gluten-free flour
3 Tbsp chopped parsley
3 or 4 cloves garlic, minced
2 Tbsp tamari
Directions
Preheat the oven to 350 ̊ and generously grease a rimmed baking sheet or use parchment paper.
Mix all the ingredients in a large bowl, stirring to combine evenly.
Form the mixture into patties using a packed 1/2 cup for each. Arrange them on the baking sheet.
Bake the burgers for 25-30 minutes or until firm and the vegetables are cooked through.
Makes 10 burgers.
